Baking - Bread (part 3)

3rd of my 4-part Bread baking blog entries


Our next hands on activity, same groups, our group was assigned to prepare the ingredients for Soft Monay, Mongo bread, Spanish bread and Hamburger buns. While the other group prepared for Raisin Bread, Pan de Mongo, Vienna Bread (French bread), and Pan de Coco.



Ingredients for Soft Monay: 
All Purpose Flour – 946 grams
Sugar – 189 grams
Salt – 15 grams
Shortening – 38 grams
Butter – 38 grams
Yeast – 14 grams
Milk Powder – 38 grams
Egg – 47 grams
Water – 444 grams

Ingredients for Mongo Bread/Pan de Mongo:
Bread Flour – 1740 grams
Sugar – 280 grams
Salt – 26 grams
Shortening – 70 grams
Butter – 70 grams
Yeast – 26 grams
Milk Powder – 70 grams
Egg – 174 grams
Water – 833 grams


Ingredients for Spanish Bread:
Bread Flour – 1110 grams
Sugar – 178 grams
Salt – 17 grams
Shortening – 44 grams
Butter – 44 grams
Yeast – 17 grams
Milk Powder – 44 grams
Egg – 111 grams
Water – 533 grams

Filling for Spanish Bread:
Margarine/Butter – 200 grams
Brown sugar – 200 grams
Bread Crumbs – 100 grams
Bread Flour – 50 grams


Ingredients for Hamburger buns 
Bread Flour – 837 grams
Sugar – 134 grams
Salt – 13 grams
Shortening – 33 grams
Butter – 33 grams
Yeast – 13 grams
Milk Powder – 33 grams
Egg – 84 grams
Water – 402 grams


Ingredients for Vienna Bread (French bread):
Bread Flour – 1000 grams
Sugar – 10 grams 
Salt – 20 grams
Oil – 10 grams
Yeast – 10 grams
Water – 600 grams


Ingredients for Pan de Coco:
Bread Flour – 936 grams
Sugar – 150 grams
Salt – 14 grams
Shortening – 38 grams
Butter – 38 grams
Yeast – 14 grams
Milk Powder – 38 grams
Egg – 95 grams
Water – 450 grams


Ingredients for Raisin Bread:
Bread Flour – 1740 grams
Sugar – 280 grams
Salt – 26 grams
Shortening – 70 grams
Butter – 70 grams
Yeast – 26 grams
Milk Powder – 70 grams
Egg – 174 grams
Water – 833 grams

Unfortunately,  i haven't took pictures of some of the breads (Spanish bread, Pan de Mongo and Pan de Coco) - they were either baked last or we already had our partings (actually i didn't know why i didn't took pictures of those breads, maybe i'm too tired after our baking session. haha) oh well .. >_>

    AND SO THIS IS HOW YOU BAKE BREAD! whoah! haha Did you really enroll in a class? Man I would love to learn how to bake bread. I'd love to make Spanish bread

  2. hihi.. I love pandas actually :)) and it's just so happened na my younger sister have a panda plushie whom she carries around so much (my sister btw is already a 4thyr architecture student) hahaha.. :)

    and yeah, i enrolled in a baking class, just this month, hahaha, since i was so bored at home (though i like to spend most of my time at home, but still...)

    btw, if you have read my first entry about baking here, you'll know where i enrolled. hahaha.. actually it's some kind of a crash course, but we do learn a lot since our teacher is a professional baker. :3

    (most of my classmates there are bread enthusiasts who plans to make bread baking their business.)

    if you're interested you could enroll in it too (if you're not so busy) :)

    [OR i could teach you how to bake Spanish bread if you like hehe] :)
